Our Cold-Smoked Salmon is exceptionally popular, and at the Coromandel Smoking Co. we pride ourselves on our wonderful presentation. Smoked the traditional way, the succulent slices of Salmon have a delicate bloom while maintaining their beautiful colour. Coro Smoke’s wafer-thin slices make beautiful decorative curls or flowers for garnishes, and mouth-watering hors d’oeuvres.
About Chinook Salmon (Oncorhynchus tshawytscha)
Chinook Salmon flesh is an attractive dark pink to red colour. Its oil content is higher than any other salmon and it is a rich source of Omega 3 fatty acids. Chinook salmon’s rich flavour makes it perfect for sashimi or for baking, grilling and hot or cold smoking.
Originally a native of the North Pacific region and its coastal rivers Chinook Salmon farms are now well established in the Marlborough Sounds, on the East Coast of the South Island, and at Stewart Island. They are mainly silver in colour, with a range of golden pinkish hues, and reach 70-100 cm in length.
